Christophe Paubert - Winemakerįor Christophe Paubert, Winemaker and General Manager at Stags’ Leap Winery, the identity of a wine is found through the terroir. Keeping each block separate allows close monitoring of each individual lot through aging, maximizing the depth and potential of the estate vineyards. Additionally, each lot was held separately in French oak barrels (60% new) for 20 months before Winemaker Christophe Paubert hand selected the most expressive of them to blend just prior to bottling. The long maceration period added color, tannin and complexity of flavors to the Cabernet Sauvignon. The Leap is a barrel selection and blend of the best Cabernet Sauvignon blocks, lots and cooperages. Drinks superbly now but demonstrates the opulence and intrigue of the estate, that will allow this Cabernet to age for many years to come. The texture is robust and plentiful, but the intensity is softened by the terroir elements coming through from the well-balanced delicacy and grace that has become synonymous with Stags’ Leap estate wines. The mouthfeel is powerful and rich, with depth and structure, full of velvety round tannins and a long, lingering mouth-watering finish. The palate comes through with interweaving layers of blackberry, deep plum and black currant, alongside delicate nuances of mocha, espresso, graphite and black pepper spice. ![]() This wine is classic Stags Leap District Cabernet, exhibiting blackberry, raspberry and black currant aromas on the nose, along with subtle baking spice notes of cinnamon, dark chocolate and espresso. Drinking Window 2020-2040.Our 2017 The Leap Cabernet Sauvignon captures the distinctive personality of our estate vineyard and this wonderful vintage, offering a dark, seductive, full-bodied wine with an intensity of dark berry fruit alongside a plush, creamy texture. About 2% of Cabernet Franc rounds out the blend. Aromas of underbrush, cigar box and toffee meld into a dense but lifted, multi-layered palate with flavours of bramble, cassis and cigar smoke. This fruit produces a beautiful, red-fruited and perfumed expression. Then in 1986 Winiarski bought Fay Vineyard and immediately replanted, making 1990 the first vintage under Stag’s Leap Wine Cellars’ ownership. It would be hard not to fall in love with this wine’s svelte refinement. ![]() There’s nothing pushy or potent about its complexity, just a waterfall of minerals and fruits that seems to continue long after each taste. The soils at Fay are alluvial, remnants of an ancient riverbed, unlike the rock that eroded off the Stags Leap Escarpment and collected at the base of the hill at S.L.V., Winiarski’s original vineyard. Wine & Spirits Magazine scored this 95 points saying "As Stag’s Leap Wine Cellars sets out to celebrate its 50th anniversary, this vintage of Fay cabernet may be the best wine I’ve tasted from that historic vineyard-the site and the wine that initially convinced Warren Winiarski to purchase the rocky hillside next to Nathan Fay’s vineyard. ![]() The site once considered too cool for Cabernet, it delivers high-toned, floral character dipped in tangy red fruit, the tannins pillowy and supple with structure to last decades longer. Wine Enthusiast Magazine awarded this a "Cellar Selection" and scored it 95 points saying "A 100% estate wine from the historic site where Stag's Leap first began, this is nearly 100% varietal, with 1.5% Cabernet Franc. This 2017 is 98.5% Cabernet Sauvignon and 1.5% Cabernet Franc, aged 21 months in 100% new French oak. Stag's Leap Wine Cellars purchased most of Fay's vineyard when the grower retired in 1986 and Fay Vineyard Cab continues to be one of their signature wines. ![]() Fay Vineyard Cabs have garnered tremendous praise and accolades over this half century including countless 90+ scores. It was the first Cabernet Sauvignon vineyard planted in the Stags Leap District. This is the 50th Anniversary bottling of Stag's Leap Fay Vineyard Cab! One of the great vineyards of Napa Valley, pioneer farmer Nathan Fay planted his vineyard way back in 1961.
